This winter we discovered calamondins from one of our favorite farms. The calamondin is a native of the Philippine islands and is a cross between a mandarin orange and a kumquat. The fruit has the scent of oranges and a tart, sour flavor.

We’ve mixed the calamondins with a hint of Kashmir saffron for a jam that starts with a tart flavor and follows with layers of rich saffron and orange tastes.

We love this jam served with a cheese plate.
