Caramel Popcorn

    “I got this recipe years ago from a neighbor and loved it! It’s great at parties and gift giving at Christmas. Makes lots!”

    Ingredients

  • 1 -2gallonprepared popcorn
  • 2cupsbrown sugar
  • 1cupbutter
  • 1/2 cup corn syrup or 1/2 cupmaple syrup
  • 1/2 teaspoonbaking soda
  • 1/2 teaspoonsalt
  • 1teaspoonvanilla
  • 1cuppeanuts( Optional)
  • Directions

  • Preheat oven to 250.
  • Prepare popcorn and set aside.
  • In a sauce pan bring to a boil brown sugar, butter and syrup.
  • Boil at a slow boil for 5 minutes without stirring.
  • Remove and add baking soda, salt, vanilla and peanuts.
  • Pour over popcorn and toss.
  • Lay out on greased cookie sheets and bake for 1 hour stirring every 20 minutes.
  • Store in Large Zip Lock Bags.

Being a vegan, I used this recipe and substituted margarine for butter. Yum. Most people told me (away from my roomate’s ears) that mine was much better 🙂 P.S. Amazing, he was so pleased 🙂 I would recommend laying your popcorn on the cookie sheet and slowly drizzle the carmel over to get an even coat. I might try the paper bag idea, spraying the bag with a little oil. I also wonder how long it’ll last with out getting soft or stale (How far ahead can it be made for gifts/favor, I’ll let you know when I find out.)”

The only thing I would change is to not make too much popcorn because it doesn’t coat it as well. I made over 2 gallons and my popcorn doesn’t look as evenly coated as in Marsha D.’s photo.   • “Oh My GOODNESS!!! This stuff rocks! It take a little time and it’s hard to be patient for it to cook (once you know how awesome it tastes!) but it’s SO worth it! We had a movie night with a small group and had to bring our favorite popcorn, I tried this one (tried margarine one time, nope) for the family first. Then made again and again for a birthday, my “trials” were 4 different batches! When I finally made it for the movie night it was gone lickety split! The other “caramel popcorn” made in the micro, was hardly touched. I’ll keep this forever!”
