    Ingredients

  • 2cupswhite flour
  • 4chicken breasts, cubed
  • 2onions, thinly sliced
  • 1 1/2 cupsapple juice
  • 3teaspoonsorange rind
  • 10clovesgarlic, peeled
  • salt, pepper and mustard powder,to taste
  • 1teaspoondried basil
  • 1teaspoondried thyme
  • 1teaspoondried ginger
  • oil( for frying)
  • Directions

  • Place the salt, pepper and mustard powder in a plastic bag with the flour.
  • Shake the chicken in the bag until it is well coated with the seasoned flour.
  • Heat the oil in a heavy saucepan and saute the chicken on all sides.
  • Remove and drain.
  • Saute the onion.
  • Add the apple juice and garlic.
  • Add the rest of the seasonings, orange peel and chicken.
  • Pour into an ovenproof dish and cook in a medium oven (180 degrees Celsius) for about 45 minutes.

I had to do without the mustard powder, as I discovered in the middle of assmebling the dish that I had no mustard powder int he house, but it was still a major hit with my fiance and our guests. I added extra apple juice to make more “sauce” and included diced apple to the dish just before baking, and loved the results. It was great served over rice. The next time I make it — and there *will* be a next time — I will make sure that I add the mustard powder, since I think it will make this already great dish even better.”
