    Ingredients

  • 2 -4boneless skinless chicken breasts
  • 1/4 cupflour
  • crabmeat (canned works fine) or shrimp (canned works fine) orlobster( canned works fine)
  • salt
  • pepper
  • asparagus spear, cooked about 3-4 minutes
  • hollandaise sauce
  • Directions

  • Dredge the chicken in flour seasoned with salt and pepper.
  • Saute in clarified butter until lightly browned on both sides, approximately 6-7 minutes.
  • Reduce heat, and cover.
  • Cook until chicken is done.
  • Remove chicken to serving platter and top with the shellfish and asparagus laid across the top.
  • Coat with Hollandaise sauce.
  • Serve immediately.

  • “I can’t believe I posted a picture but forgot to write a review. Extremely easy but superbly delicious recipe. I coat the chicken with flour, salt and pepper, brown it and then cooked the chicken in a mixture of white wine and chicken broth. Make sure to cook it covered and only take the lid off for the last 2-3 minute of cooking as this will give the chicken a little crisp. Moist in the inside and slightly crispy on the outside, perfect!”
