    Ingredients

  • 2cupssugar
  • 1/2 cupvegetable oil
  • 4 (1ounce)unsweetened chocolate squares, melted
  • 4eggs
  • 2teaspoonsvanilla extract
  • 2cupsall-purpose flour
  • 2teaspoonsbaking powder
  • 1/2 teaspoonsalt
  • 3/4 cupsifted powdered sugar
  • Directions

  • Combine sugar, oil, and melted chocolate in a large mixing bowl; beat at medium speed of an electric mixer until blended.
  • Add eggs and vanilla, mixing well.
  • Combine flour, baking powder and salt in a medium bowl.
  • Add about one-fourth of dry mixture at a time to chocolate mixture, mixing after each addition.
  • Cover and let chill at least 2 hours.
  • Shape dough into 1-inch balls, and roll in powdered sugar.
  • Place cookies 2 inches apart on lightly greased cookie sheets.
  • Bake at 350 degrees F.
  • for 10 to 12 minutes.
  • Cool on wire racks.

I refrigerated my dough overnight–only because when I was reading the recipe originally, I missed the part where it said to refrigerate for 2 hours. It was 9:30 pm at the time, and I wasn’t about to start baking cookies 2 hours later, so it got left in overnight. From reading the other reviews, it sounds like that was a good thing. I also had to put the dough back in the fridge to stay chilled between batches. If the dough got the slightest bit warm, it was a little hard to work with. I will say, they are extremely messy to make, but no worries. That’s half the fun at the holidays. I don’t know if I made the cookies too large, but I got exactly 5 dozen cookies. not 8. Still plenty. My kids loved them and my daughter said they were “light as a feather”. Mmmmm..so chewy and chocolately. Love them. I’ll be putting these in my Christmas goody tins to distribute to neighbors and friends. :)”
