Country Chicken Pot Pie

  • Ingredients

  • 2tablespoons margarine or 2tablespoonsbutter
  • 3/4 lbboneless skinless chicken breast, cut in 1 inch pieces
  • 3/4 teaspoonsalt
  • 8ouncesfresh green beans, cut in 1 inch pieces
  • 1/2 cupred bell pepper, chopped
  • 1/2 cupcelery, thinly sliced
  • 3tablespoonsall-purpose flour
  • 1/2 cupchicken broth
  • 1/2 cuphalf-and-half
  • 1teaspoondried thyme leaves
  • 1/2 teaspoonrubbed sage
  • 1cupwhite pearl onion, frozen
  • 1/2 cupfrozen corn
  • pie crust, 10 inch
  • Directions

  • Preheat oven to 425 degrees.
  • Spray a 10-inch deep dish pie plate or three 4-inch ramekins with nonstick cooking spray.
  • Melt margarine in large deep skillet over medium-high heat.
  • Add chicken; cook and stir 3 minutes or until no longer pink in center.
  • Sprinkle with salt.
  • Add beans, bell pepper and celery; cook and stir 3 minutes.
  • Sprinkle flour evenly over chicken and vegetables; cook and stir 1 minute.
  • Stir in broth, half-and-half, thyme and sage; bring to a boil over high heat.
  • Reduce heat to low and simmer 3 minutes or until sauce is very thick.
  • Stir in onions and corn.
  • Return to a simmer; cook and stir 1 minute.
  • Pour into pie crust.
  • Bake 20 minutes or until crust is light brown and mixture is hot and bubbly.
  • Let stand 5 minutes before serving.

  • “I made with onions, celery, mushrooms, peas and carrots, but followed the basic crust and recipe other than the veggie substitutions, as that is what we like the best.Great pot pie!To make it even faster you can buy the store bought pie crusts, rather than making your own, and use them.Just make sure you let them sit out for awhile so they are easy to move to the pie,and to cut and crimp the edges.This pie had no mention of how many crusts in the recipe, just in the directions.People not reading the recipe before they started preparing it wouldn’t know you either have to make one or buy one, so I took off a star for unclear directions.Still an excellent pie though and one I will share with my friends and family.”
