    Ingredients

  • 2eggs, beaten
  • 1cupoil
  • 3cupsflour
  • 1teaspoonbaking soda
  • 8tablespoonscocoa
  • 2cupsbrown sugar
  • 1teaspoonsalt
  • 1cupevaporated milk
  • Filling

  • 1cupvegetable shortening( Crisco preferred)
  • 1/3 cupevaporated milk
  • 2cupspowdered sugar
  • Directions

  • Preheat oven to 350°F.
  • Sift flour, baking soda, salt, and cocoa together into a large bowl.
  • Add remaining ingredients; mix together.
  • Drop chocolate batter by teaspoons about 3-inches aparton cookie sheet.
  • Bake for 5 minutes.
  • Remove to a cooling rack.
  • Beat filling ingredients together until creamy.
  • Put the white fillingbetween two cooled chocolate cookies like a sandwich, then wrap inplastic wrap.

Maybe because of the evaporated milk?? They cookie/cake part is a little sticky because they are so moist, so I recommend not stacking them. If you do, I would try putting waxed paper between each layer. This new addiction is very good at room temperature or chilled. We are toying with the idea of pouring a thin layer of ganache over them and making them taste more like a Ho-Ho or Swiss Cake Roll. ;)”
