“I have chopped more cabbages than I care to think on in the search for the definitive coleslaw.My tastebuds are fairly amiable, but not so those of my son.His primary (annual summer) complaint is that I simply canât make decent coleslaw.This assertion is based not necessarily on the facts, but rather what in actuality he is saying is that I hadnât yet made a cabbage salad that tastes remotely like what his beloved grandmother used to make.Apparently now I can!!I could see from the first mouthful that I finally had lucked into a recipe that he liked.In this case it is almost secondary that I loved it too.Thank you Karen!(prepared for the COOKOUT Cookathon July 1st âJuly 4th 2002)”
“Karen, this is a great coleslaw recipe–all the ingredients readily available–with no exotic ingredients.The only changes I made was I used cider vinegar instead of white vingear, because that is what I had on hand. I also used one shallot instead of the red onion and eliminated the green pepper.”

“I made the recipe times 5 to serve a large group. It was so easy to whip up the dressing the day before and I added pkg. slaw (added fresh carrots, red pepper, carrots) the day of. I served with platters of sandwiches, baked beans, and marinated veggies. It was going fast so I “hid” in the pantry and stirred up 1 more batch of dressing and quickly assembled the rest. “Excellent!Everyone loved it and asked for the recipe.I added a handful of Craisins, just because I had some on hand.I was concerned that it was a bit on the dry side and needed more mayo mixture.I resisted tinkering with the recipe, and it was perfect — the coleslaw became moister as it chilled in the refrigerator a few hours.”

“This was delicious. I used the bagged coleslaw mix and omitted the onions. I also used a packet of sweet ‘n low instead of the sugar. I must say that the mayo/vinegar proportions are perfect in this recipe, and that always seems to be the challenge. I brought it to a picnic Saturday, and only wished I’d doubled the recipe. As well as being tasty, this was truly creamy. And, BTW, I made it the day before and it wasn’t watery the next day. Perfect. Thanks for this winner, Karen!It’s in my recipe box already.”

“YES! I found a coleslaw recipe without half a cup of sugar in it! This is so good, Karen… I increased the carrots to 2/3 cup, and I always make a double recipe for our family of ten (eight of us, plus my grandparents). My mom and I like to put it on hamburgers.”
