Crisp Bread and Butter Pickles

  • Ingredients

  • 4quartscucumbers, thinly sliced
  • 8mediumwhite onions( Onions should be peeled and thinly sliced.)
  • 1/2 cuppickling salt
  • 5cupssugar
  • 1 1/2 teaspoonsturmeric
  • 1teaspooncelery seed
  • 2tablespoonsmustard seeds
  • 5cupscider vinegar
  • Directions

  • Mix the cucumbers and onions with the salt and 2 quarts of cracked ice and let them stand, covered with a weighted lid, for 3 hours.
  • Drain thoroughly and put the vegetables in a large kettle.
  • Add the sugar, spices and vinegar and bring almost to a boil, stirring often with a wooden spoon, but do not boil.
  • Pack the pickles into hot jars and seal.

  • “The is the recipe I have been making for the last 50 years. I do add a sliced red bell pepper to the sliced pickles to add a bit of color in each jar. I do bring the liquid to a boil before I add the sliced pickles. When hot through I place in jars and process 10 minutes in a BWB.”

I’m not a big fan of sweet pickles, but these have just enough tang to make them so yummy! They are great on sandwiches and just for eating!
