    “Tender would be the word for these ribs when done!”

    Ingredients

  • 3 1/2-4lbsshort rib of beef
  • 1teaspoonvegetable oil
  • 2largeonions, cut into wedges
  • 4mediumpotatoes, peeled and halved
  • 4mediumcarrots, peeled and cut into 4 hunks each
  • 1cupwater
  • 1/3 cupred wine vinegar
  • 1teaspoonpaprika
  • 1teaspooncurry powder
  • 1/2 teaspoonchili powder
  • 1/2 teaspoon Coleman’s dry mustard or 1/2 teaspoonKeen’s dry mustard
  • 2teaspoonssalt
  • 1teaspoonpepper
  • 1teaspooncornstarch
  • 2teaspoonswater
  • Directions

  • Brown ribs in oil and place in crock pot with the onions, spuds and carrots.
  • Mix together the remaining ingredients and pour over ribs and veggies.
  • Cover and cook on low for 8-10 hours.
  • Remove ribs and veggies, and add the cornstarch mixture to thicken liquid if desired.
