  • “We love this salad, I use a whole pre cooked rotisserie chicken from the grocery store. It seems to be exactly the right amount of chicken. I like to make this up ahead of time, great for quick lunches and suppers. Very versatile, you can through just about anything in it! Thanks. Update.I am still loving this, I took it to a potluck with rave reviews, nice because it is gluten free.I served it on endive lettuce leaves!I always double the curry and add the zest of the lime!”

  • “Very good! The scallions made the dish. At first, I made it with only the 3/4 c mayo, and it was still missing something. I added ~1/4 c of greek yogurt, and it gave it the tanginess that I was looking for. Instead of craisins, I used 1/2c of gold raisins that i had in my cubburd and about 1/2-3/4 c of halved red grapes. Much better the next day.”

  • “Made this for sandwiches and I enjoyed the blend of flavors.I used fat-free mayo, chopped only 1 large apple and omitted the celery entirely. Enjoyed it and thought the curry and Craisins were a nice variation. Thank you for sharing!”

  • “I love the combination of flavors and the crunch provided by the apples, celery and pecans. This made an excellent lunch served on flat bread. It transports nicely and can be made with things I typically have on hand.I did increase the amount of curry powder.”

  • “This was an excellent chicken salad. I had only 3 cups of cooked chicken, so I had to scale it down a bit. It was fantastic. Loved the addition of the sweet/tart cranberries, the Granny Smith apples and the pecans (which I toasted beforehand). I think the fresh lime juice gave it that something extra also. A real keeper! Thanks for posting.”

  • “Love It, Love It, Love It!I have used this recipe several times–I always tend to make it for a crowd and it disappears quickly— Even those who “don’t like curry” gobble this one up–I halved it for a group yesterday because I was low on chicken, and it turned out great–One thing I usually do is increase the amount of curry–I tend to add an additional half a teaspoon to it—Love the Curry Flavor–“

  • “WOW- this turned out really tasty! I did have to make a couple of changes based on what I had- I used fresh lemon juice instead of lime for the acid. I used a yellow onion place of scallions, and we left out the apple. Still, the flavor combinations were great- who knew curry in chicken salad could be so good? We will definitely make this again. Also, we served on crackers- may be a bit rich for a sandwich for me!”

  • “Made this one for take to work lunches for me and my husband. We both thought it was exceptional. He used the filling to make sandwiches. I had mine over a bed of salad greens. The amount of curry was just right for me but he sprinkled a little more over his. That is kind of an individual thing. I also toasted the pecans. I loved the apples and craisins together. Thanks for a very interesting and different lunch idea.”

  • “Perfect, loved it.I left out the celery, worked just fine.”

  • “Love this salad — just love it.I vary it all the time; tonight I threw in grapes and red onion, and left out the nuts.Other times I throw in walnuts. It’s very versatile, and always yummy. Thanks!”

  • “Very tasty.I made a half recipe with yogurt instead of mayo and served over salad greens.”

  • “This is diabetic-friendly and hubby really seems to like it!It was easy to put together for him to bring with his lunch.”

  • “Great salad.I made it the day before, omitting the apples and nuts until serving. The cranberries softened perfectly, and the combination of flavours is wonderful.”

  • “I really did like this salad, but the dried cranberries were just too tart for everything else which was flavored very mildly. I plan to save this in my “favorites” folder, but I’m going to put in golden raisins in place of the Craisins. I think they would not overpower the other flavors as much, but still add a similar effect. The Craisins did add a pretty touch, but I felt they really didn’t blend well with the overall taste. With each bite that had one in it, that was all there was to taste. To really enjoy the overall salad, I would either leave them out of try the golden raisins. (I think regular raisins would be too strong a taste as well.) I have been looking for a good chicken salad recipe that does not include grapes, and this one fills the bill with that one caveat.Update – I am editing my review because I just had this salad 2 days old.The sit time mellowed the craisins, so they were just fine.I suggest if you do this you let it sit a day or two.I let mine sit 2 days, and that totally mellowed the Craisins to an acceptable level.Very nice salad!”

  • “Fantastic. What I was looking for. Everyone at the office potluck asked for recipe. It lends itself to modifications.None of this? Use that instead.I used Green curry paste (in a jar) it was fantastic.Didn’t give it 5 stars because I thought it needed salt, but that could have been lack of seasoning on the chicken to start with.Salt and Pepper to taste is needed.”

  • “I lover making this recipe. I use Regular Hellman’s Mayo, Sun-maid CapeCod Dried Cranberries, no pecans and Green apples with the skin on. Everything i keep as directed, i really love the flavor of this chicken salad and in my opinion, it beats boring plain chicken salad any day of the week. Also a small tip, i let my cranberries sit in some boiled water for a few minutes till they plump up. thanks for a great recipe!”

  • “THis is excellent!!!I made it exactly as written (except I added a dash of salt) and it was out of this world!THis is even good enough to serve at a party!THanks for the wonderful recipe tgobbi…..”

  • “Excellent!Great salad.I made as a main dish for my lunch.I didn’t have lime juice, so used lemon instead, and did not include the nuts or apples since I didn’t have them on hand.I did sprinkle a little salt on while eating.”

  • “The first time I made this it was to use up some leftover chicken. The second time I made this it was to use up some leftover turkey (just as good as chicken). The third time, I roasted a whole chicken just so I could make this delicious salad. My husband and I love this recipe!”

  • “Sooooooo good!!! I can’t wait to make it again. I scaled it down to a single serving size for me. It was sweet, crunchy, and tart all in one! The only changes I made were increasing the curry and also adding a little bit of salt. 😛 I had it on a bed of greens. Thank you for the delicious salad!”
