    “This is a quick easy way to dress up cauliflower. Try the dressing over broccoli or a veggie salad.”

    Ingredients

  • 1headcauliflower, broken into florets,steamed for about 8 minutes,still crisp but hot through
  • 4tablespoonsDijon mustard
  • 1/3 cuplow-fat yogurt
  • 1/3 cuplow-fat mayonnaise
  • 2 -3tablespoons1% low-fat milk
  • salt and pepper
  • paprika
  • Directions

  • Mix dressing ingredients with a fork (not the paprika).
  • Toss gently with the cauliflower.
  • Sprinkle generously with paprika& serve.

  • “I just had this for lunch and it was pretty good.I didn’t have plain yogourt so I used vanilla instead and that worked fine.I also didn’t have paprika and I used more yogourt than mayo for calorie reasons.I was unsure if I’d like it when I looked at the finished product, but it was actually pretty tasty and the dijon gives it a lot of zip.I undercooked the caulifower because I liek it crunchy.I had WAY too much dressing.You could have the dressing ingredients and still have more than enough for a whole cauliflower.Thanks, Bergy!”
