Enchilada Casserole

    “My one-year-old really gobbled this up! It’s only as spicy as you make it. And, boy, was it easy!!”

    Ingredients

  • 1lblean ground beef
  • 1 (10ounce) cans enchilada sauce
  • 1cupsalsa
  • 6flour tortillas( 10 inch)
  • 2cupsfrozen corn
  • 3 (12ounce) cups shredded cheddar cheese
  • Directions

  • In a skillet, cook beef over medium heat until done; drain the fat.
  • Stir in enchilada sauce and salsa; set aside.
  • Place two tortillas, overlapping if necessary, in the bottom of a 13 X 9 inch baking pan, coated with cooking spray.
  • Cover with 1/3 of the meat mixture; top with one cup of corn; sprikle with one cup of cheese.
  • Repeat layers once, then top with remaining tortillas, meat and cheese.
  • Bake uncovered at 350% for 30 minutes.

I changed it a little by using vegetarian ‘ground beef’ and also added black beans, and instead of using salsa from a can (so it wouldn’t be too liquidy) i just chopped up some tomato, onion, and cilantro and then added it to the layering processes. I also used corn tortillas. Additionally when i cooked the meat substitute used some ‘Mexican meat seasoning’ which added great flavor. This is a KEEPER! It was awesome for leftovers too!!”

  • “I really enjoyed the taste of this casserole.I did make a couple of substitutions – my store was out of Enchilada sauce, so I substituted Burrito starter, and I used Salsa Con Queso, a cheese and salsa mixture for the salsa.The end result was very flavorful, and filling, especially since the burrito mix had pureed pinto beans in it.The kids weren’t pleased with the corn addition, but I thought they added a nice sweet crunch to the dish.I would certainly make this again.”
