“Erin, I had a question before I prepared these potatoes as to whether or not this recipe was a side dish or a main course.I decided to double the ham and used it as a main course.However, this is a delicious recipe, whether used as a main course or a side.The potatoes were perfectly seasoned and tender.The ham added just the right balance to the dish.I omitted the cheese as I decided it would present too much.Delicious, Erin!Thank you for a wonderful meal!”
“This was super yummy!!I tried making scalloped potatoes a few years back, but it was one of those cream of mushroom soup recipes, and it just wasn’t edible.Finally decided to give scalloped potatoes a try again and boy am I happy I tried this recipe… it’s fantastic!! “Absolutely my favorite! Served it at a dish to pass meal to rave reviews…I did add a little more cayenne pepper than called for just because we like everything with a bit more spice, otherwise followed the recipe exactly. AMAZING! Won’t ever use another recipe..I have made it regularly since the first time with some slight variations… just to see if it will work. Skim milk withhalf and half, with and without cheese, extra ham…each time it is just as good as the first! Definitely would recommend!”
“Great scalloped potatoes and ham recipe! I used 6-7 regular russets, whole milk and no cream and it was still deliciously rich. Much better than the Campbell’s soup kind. I thought it might be too peppery/hot when I tasted the sauce before baking, but it was perfect. I also added 3/4 cup of extra sharp cheddar on top and used 2-2.5 cups of ham and it was the perfect amount for us. Thank you!”

“This was excellent!My first try at scalloped potatoes and it came out perfect.I cooked it in a deep non stick skillet, and the edges were browned and delicious!Slipped it under the broiler at the end to brown the top!I did add a couple handfuls of shredded parmesan cheese!Fabulous, everyone loved it DH and young children!Thanks Erin.Will definitly make this one again!”

“Great recipe! It was very easy to follow. I used skim milk and added powdered milk to cream it up a little. I needed more liquid, but it might have been because I really let the onions cook down and used real butter so it realeased a lot of moisture in cooking. I also used 2 cups of ham just because I had it left over and needed to use it. Iused the cayanne pepper, too. just a dash didnt make it really spicey. It just had a kick. Thanks for the recipe!”
“Great! I didn’t have any regular cream, so I used 1/2 cup of sour cream and mixed it in with 2 1/2 cups of regular milk. I cooked the potatoes in the microwave for 7 minutes before I added them to the sauce just to get them started. They were wonderful!”

“This turned out great! I cooked a couple of crushed garlic cloves with the onions just to impart the flavor. I left out the cayenne only because I didn’t want a hot flavor to the dish. I split this up between two dishes since it is just me and my husband, so now there is one in the freezer waiting for us! Thanks for such a simple, delicious recipe!”

“Yummy and easy! This is the BEST way to use leftover ham. I didn’t have half and half so I used a little more butter and 3c of 2% milk and it was still thick and delicious. We used almost 2c of ham and some Cabot sharp cheddar. Not lowfat but good old comfort food!!”
