    “This marinade gives the chicken a fresh flavor. Easy to make and quick. Don’t over cook the chicken but make sure it is done.The recipe makes 3/4 cup of marinade enough for 6 breasts or whole legs or 12 thighs/drumsticks. When you grate or zest the lime use the whole lime peel”

    Ingredients

  • 1/4 cupsoy sauce
  • 1/4 cupvegetable oil
  • 2tablespoonsfresh lime juice
  • 2tablespoonsgrated fresh ginger
  • 1/2 teaspoonpepper
  • 1garlic clove, minced
  • 1lime zest
  • Directions

  • Mix all the ingredients together with a hand held blender or food processor Marinate the chicken for at least 2 hours then grill, BBQ or bake.

  • “I would give this 2 stars except that I fully admit that I might be the reason it was screwed up. I didn’t notice that I was supposed to be processing/blending until I had already dumped all the ingredients in a bowl, so I just whisked it. This might have affected the flavor which was, well, nonexistent. The marinade smelled great but after cooking the chicken tasted like plain chicken. This was for bone-in legs after 24 hours of marinating.”

  • “A pretty good marinade (I love the lime flavour!) but I still feel like it is missing something. I marinated my chicken for about 7 hours and I definitely wouldn’t have done any longer. I think the acids had partially cooked the chicken, which changed the texture somewhat.”

I just decided to zest one lime before I juiced it. It’s no big deal but when using citrus I like to follow the recipe to a T. Sometimes a little more a little less can make a big difference in the taste. I had the leftovers in my salad today. Thanks Bergy!”
