Goji Berry Toast with Almond Butter, Rose Jam and Banana

The first recipe of a three part series from health and wellness duo, How You Glow.

This recipe, from Jessie and Tara from How You Glow, focuses on superfood and super-herb infusions. We can truly make food medicine when we incorporate these incredible, potent, and powerful ingredients.

Unique among fruits because they contain all essential amino acids, goji berries also have the highest concentration of protein of any fruit. They are also loaded with vitamin C, contain more carotenoids than any other food, have twenty one trace minerals, and are high in fiber. Boasting 15 times the amount of iron found in spinach, as well as calcium, zinc, selenium and many other important trace minerals, there is no doubt that the humble goji berry is a nutritional powerhouse.

Not all toast is created equal. This next-level toast recipe is a wonderful way to start the day and will nourish you like no other. Almond butter, with the addition of goji berry powder, will give you a nice hit of protein to sustain your energy and focus throughout the day. The rose jam will boost your mood and the banana will load you up with potassium. The top it off, the bee pollen adds in some extra goodness, for one of the most superfood packed breakfasts around.

Goji Berry Toast with Almond Butter, Rose Jam and Banana


1 slice toast
2 tablespoons almond butter
1 tsp goji berry powder
1.5 tbsp rose jam
banana + bee pollen for topping

1. Lightly toast your bread

2. In a small bowl, add your almond butter and goji berry powder, and mix until incorporated.

3. Spread your almond butter on toast, top with rose jam.

4. Thinly slice half a banana, fan out the slices and then roll it into the shape of a rose.

5. Top off with bee pollen

6. Enjoy!
