    “This salad is easy to make and tastes fantastic. Great for family barbecues!”

    Ingredients

    BASE

  • 1package rotini pasta or 1packagefusilli
  • 1cansliced olive, , drained
  • 1canartichoke heart, drained & quartered( I prefer packed in water)
  • 1cupgarbanzo beans, drained
  • 1cucumber, peeled,halved & sliced
  • 1smallonion, chopped
  • 1/2 green pepper, chopped
  • 1/2 red pepper, chopped
  • 1cupcherry tomatoes, halved
  • 1packagefeta cheese, drained & crumbled
  • DRESSING

  • 4tablespoonsolive oil
  • 4tablespoonsred wine vinegar
  • 4tablespoonswater
  • 3tablespoonslemon juice
  • 4teaspoonsoregano
  • 4clovesgarlic, minced
  • salt & pepper
  • Directions

  • Boil pasta according to directions, drain.
  • In a small bowl prepare dressing and set aside.
  • In a large bowl mix pasta with prepared vegetables, toss and then add crumbled feta cheese.
  • Add the dressing and stir.
  • Best if allowed to refidgerate for an hour before serving.
