“We made this last night, using cod (since that’s what we had) instead of halibut. I think I’d mix up the fresh tomato sauce in the morning and let it sit all day, or at least a few hours, to let the flavors marinate and mingle a bit more, and perhaps add some finely chopped onion as well. I served it with brown rice, which soaked up the juice from the sauce quite well.”
“This was after my fancy! This is so easy to make, but extremely delicious. I have broiled the fish and added a pinch of sugar to the sauce to enhance the sweet flavor of the fresh tomatoes (I couldn’t resist). The fish came out of the oven full flavored. The un-cooked sauce is a great idea, because you obtain the flavors of fresh tomatoes and basil. I served it with rice. A great recipe, will keep in my cookbook of my favorite fish recipes.”
