“A pretty good recipe, although I did have to make a couple adjustments. I wasn’t sure how big a tin of tomatoes to use and settled on 400g, which is a small tin in the UK. I also had to simmer for longer than 3-4 minutes and add more cornflour to get the mixture to thicken up to the point where I was happy with it. I didn’t peel the potatoes and again the recipe does not specify how long to boil them for but I decided on about 10 minutes. Once all that was sorted, the dish went into the oven as directed and came out very yummy indeed. Made enough for 3 large servings or 4 with a side dish or salad.”
