Hummus & Veggie Club Sandwich

Homemade Hummus
makes 1 3/4 cups hummus
1 15oz can garbanzo beans, drained
2 tbs cup tahini paste
1 tbs olive oil
2 tbs lemon juice (approx 1/2 lemon)
1 tbs Greek yogurt
1 tbs water
3 cloves garlic, chopped
salt, pepper to taste
In a food processor, combine tahini paste, lemon juice and water. Pulse until tahini is whipped and frothy. Add garbanzo beans, garlic, and a generous sprinkling of salt and pepper. Process thoroughly until a very rough mixture is formed. Remove lid and scrape down the sides of food processor. Add olive oil and Greek yogurt to mixture. Continue processing until evenly mixed. Taste to check for flavor and consistency – if hummus is too rough for your liking, add more olive oil or water to thin.
Hummus and Veggie Club Sandwich
3 slices hearty multi-grain bread
3 tbs homemade hummus, divided
1 large tomato, sliced
1/2 avocado, sliced
4 pieces bibb lettuce
1/4 red onion, sliced
2 tbs sprouts
1 red pepper, seeded and sliced
salt, pepper to taste
Toast bread until crispy. Working from the bottom up, layer 1.5 tbs hummus, tomato, onion and lettuce, followed by the second slice of bread, remaining 1.5 tbs hummus, avocado, sprouts, and red pepper. Finish with a shake of salt and pepper to taste, top with remaining slice of bread and enjoy!
