Italian Cabbage & Bean Soup

  • 1teaspoonolive oil
  • 1/2 cuponion, chopped
  • 1/2 cupcelery, chopped
  • 1/2 cupcarrot, sliced
  • 1garlic clove, minced
  • 1 1/2 cupsgreen cabbage, shredded
  • 1cuptomato, diced with liquid
  • 1cupwhite beans, cooked
  • 2 (1 1/4 ounce) packets onion soup mix, prepared
  • 1tablespoonparsley, chopped
  • black pepper, freshly ground
  • Directions

  • Place all ingredients in a large stockpot.
  • Bring everything to a boil and let boil for 30 minutes or until veggies are done.
