“Mmmm. This is traditional dish in Slovakia too. Mushrooms and zucchini are optional, but good. We like it just with bread. Many people prepare the onion-pepper-tomato mixture in larger amounts in summer and can it for later use. Good ripe tomatoes with strong taste are the key.For me, it`s a comfort food.”
“I cut this recipe in thirds, I used two green peppers, 1/2 cup onions, 2 small zucchini, 1/2 cup diced mushrooms, 1 large tomato and two eggs, salt and pepper and margarine. We just had homemade biscuits and mandarin oranges for dessert. Verygood! My husband can eat this dish! I sprinkled a little Italian Seasoning before the liquid reduced. Thanks!”
“My husband LOVED this recipe!This was our main dish for supper tonight, so I cut the recipe in half for the two of us.Hubby said next time to make more.:-)I really enjoyed the flavor of the zucchini with the onions and bell peppers, and think next time I might add extra.I left out the mushrooms, as I don’t care for them.I was generous with the kosher salt and pepper, while I was sauteing all the veggies.I love grilled zucchini with grated parmesan, and at the very end added 1-2 tablespoons of parmesan to the top of the eggs and vegetables.I felt it complimented all the other flavors very well.I’m on low-carb, so ate this as a one dish meal.DH used a crusty bread as an accompaniment to the Lecho.Thanks Mirj, this was easy and I will be making it again!”
