Lemon Cucumber Dressing

    “I’m always looking for a good salad dressing recipe, and this is good! A great way to use that abundant harvest of cucumbers from the garden. Great over greens and tomatoes.”

    Ingredients

  • 1cupfresh lemon juice
  • 3largecucumbers, peeled and coarsely chopped
  • 3tablespoonshoney
  • 3/4 teaspoondried dill
  • 3/4 cupsunflower seeds
  • 1/2 cupolive oil
  • 4 1/2 teaspoonstamari
  • 1/2 teaspoongarlic powder
  • Directions

  • Blend in blender all ingredients, except sunflower seeds.
  • While blending, add sunflower seeds.

I added salt and more dill. I like it the way it is, but I still think one elusive ingredient is missing. It’s on the tip of my tongue, but isn’t. Wonder what it is.   • “Light and delicious! I cut this recipe down to a 1/2 cup yield and it worked marverlously. Since I have a dietary restriction regarding sunflower seeds(very high in potassium which is toxic to me in high amounts), I replaced them with 2 tbsp of chopped walnuts. It managed to give it that nutty quality and still held the integrity of the dressing. I highly recommend this dressing to anyone who’s sick of the bottled junk! Thanks Sharon123
