About This Recipe
“I found this recipe and am posting as a follow up to “Preserved Lemons.””
Ingredients
1/4 cuppreserved lemon
3teaspoonsfresh lemon juice
1teaspoonextra virgin olive oil
1/4 cupminced fresh mint
2teaspoonsminced fresh parsley
1clovegarlic
1/4 teaspoonpepper
6plum tomatoes
1green pepper
1red onion
1avocado, peeled and cut into 1/2 inch cubes
1cupkalamata olive
4ouncesfeta
6cupsmixed salad greens
Directions
Rinse the preserved lemons, remove and discard pulp.
Cut rind into thin strips.
Whisk together lemon juice and the next 5 ingredients, adding lemon rind, tomato and the next 5 ingredients.
Toss well and chill for 1 hour.
Serve over greens.
