    “A favorite Tex-Mex breakfast. Serve with sausage or chorizo, refried beans, and warmed corn tortillas, if desired.”

    Ingredients

  • 2teaspoonsbutter
  • 4eggs, lightly beaten
  • 2dashesTabasco sauce
  • 2teaspoonsonions, chopped
  • 1/2 cupcheddar cheese, grated
  • 2teaspoonsgreen peppers, chopped
  • tostados, crumbled
  • Directions

  • Melt butter in large skillet.
  • Add Tabasco into eggs and pour into skillet.
  • Add onion and green pepper.
  • Stir.
  • When eggs are almost set, add cheese.
  • Turn heat to lowest setting, add tostados and finish cooking.

I only had to make a few small changes…like the previous reviewer I also sauteed the veggies first, and since I had no tostadas I also sauteed some torn-up corn tortillas with the veggies. We didn’t have Tabasco but 2 Tbsp of salsa worked just as well. I served these with salsa and sour cream; even the kids went crazy over them. They thought it would also make a good filling for breakfast burritos.Thanks so much for posting this TexMex treat!”
