Orange Chocolate Chunk Cookies

    “These are a variation on a Mrs. Fields recipe. My Brit husband claims they taste like Terry’s Chocolate Orange cookies.”

    Ingredients

  • 2 3/4 cupsflour
  • 3/4 teaspoonbaking soda
  • 1/2 teaspoonsalt
  • 1tablespoonfresh, grated orange rind
  • 1cupmargarine, melted
  • 1/2 cupsugar
  • 1cuppacked brown sugar
  • 2eggs
  • 1teaspoonorange extract
  • 2tablespoonsfresh squeezed orange juice
  • 3ouncespremium quality dark chocolate, coarsely chopped
  • Directions

  • Preheat oven to 350 degrees.
  • In a medium bowl combine flour, baking soda, salt and grated orange rind.
  • Mix well and set aside.
  • In a large bowl blend sugars with electric mixer at medium speed.
  • Add melted margarine and beat well to combine.
  • Add eggs, orange extract and orange juice, and beat well.
  • Add flour mixture, blending just until combined.
  • Stir in chocolate chunks.
  • Drop by tablespoons onto foil lined cookie sheets, 1 1/2″ apart.
  • Bake for 12-15 minutes until cookies are slightly brown along edges.
  • Transfer cookies to a rack to cool.

I used butter instead of margarine, chilled the dough for about 10 mins. so it could get a little harder before scooping, I unfortunately only had 1 orange, and no orange extract, so the orange flavor could have been stronger, buti thought it was just fine. So i used the zest and juice of 1 orange and semi-sweet chocolate chips because that’s all i had on hand… someday i’ll make it exactly as the recipe says b/c then it’ll be even better, but mine were just fine too.
