  • Ingredients

  • 1medium-sizezucchini
  • 1smallonion, sliced
  • 1cupmushroom, sliced
  • 3lemon slices
  • 1tablespoonolive oil
  • 1tablespoonmargarine
  • 2tablespoonsparmesan cheese, grated
  • 1/4 teaspoonpepper
  • 1/8 teaspoongarlic powder
  • 3lbsorange roughy fillets
  • Directions

  • Saute zucchini, onion, mushrooms and lemon slices in olive oil andmargarine until tender, about 3 min.
  • Remove lemon slices and setaside. Stir Parmesan cheese, pepper and garlic powder intovegetables.
  • Place fish in 13×9 sprayed with pan coating.
  • Top withvegetable mixture, put lemon slices on top, and bake at 375o F. untilfish flakes easily, about 30 to 35 min.
  • Alternate fish: Red snapper, perch, catfish, flounder, or cod.
