Parmesan Chicken Skillet

    “This is a really quick and tasty supper. All you’ll need to add is a nice bread and wine.”

    Ingredients

  • 3boneless chicken breast halves, cut in bite size pieces
  • 2tablespoonsflour
  • 1teaspoonitalian seasoning
  • salt and pepper
  • 3tablespoonsbutter, divided
  • 1cuphalf-and-half
  • 1cupfrozen peas
  • 1cupdiced tomato
  • 1/2 cupparmesan cheese
  • 8ouncesangel hair pasta, cooked and drained( or your favorite pasta)
  • Directions

  • Toss chicken pieces with flour, italian seasoning, salt and pepper.
  • Heat 2 T butter in large skillet.
  • Add chicken and stir-fry to a golden brown.
  • Remove chicken and keep warm.
  • To skillet add half and half, peas and tomato.
  • Cook and stir for 2 minutes.
  • Add parmesan cheese.
  • Add 1 T butter.
  • Return chicken to skillet.
  • Toss with pasta.

Picture chicken and angel hair pasta covered with a cheese flavored white creamy sauce with bright green peas and chopped ripe red tomatoes. The short cooking time is enough to combine the flavors without losing the fresh colors. The key ingredient is the Italian seasoning. It accents the other flavors while adding a piquancy of it’s own. I would only suggest adding salt to the sauce and extra cheese to top each serving.”
