Pecan-Crusted Chicken Drumsticks

  • Ingredients

  • 12chicken drumsticks
  • 6chicken legs
  • 1egg, beaten
  • 1cupcorn flake crumbs
  • 1/3 cupfinely chopped pecans
  • 1tablespoonsugar
  • 1 1/2 teaspoonssalt
  • 1/2 teaspoononion powder
  • 1/2 teaspoonblack pepper
  • 1/4 cup butter or 1/4 cupmargarine, melted
  • Directions

  • PREHEAT oven to 400°E Toss chicken legs with egg to coat.
  • COMBINE cornflakes, pecans, sugar, salt, onion powder and pepper in large resealable plastic food storage bag.
  • Add chicken legs two at a time; shake to coat.
  • PLACE chicken on foil-lined baking sheet; drizzle with melted butter.
  • Bake 40 to 45 minutes or until tender.

  • “I got a really terrific deal on chicken quarters at the grocery store ( 10lbs for only $3!!! ) and love to try different recipes when I have a lot of chicken on hand…I didn’t have any plain cornflakes, so I used a cup of Honey Bunches of Oats cereal and omitted the sugar since it is already sweetened.To cut down on the number of bowls I used I first crushed my pecans in a heavy duty freezer bag with a meat mallet and then added the cornflakes and crushed them in the same manner. Since I had the drumsticks defrosting in a freezer bag, I just added the egg to the bag and mixed it around.This made clean up soooo easy!!!I baked the chicken on a wire rack placed over a baking pan to make sure all the chicken crisped up evenly and would not get soggy.It smelled so good when baking and the taste was just delicious.I loved the slight sweetness from the cereal and then the crunch of the pecans.We will be keeping this one in our cookbooks forever…Thanks for sharing!!!”
