Peruvian Garlic Chicken

    “How about something hot and spicy for dinner tonight? Serve this with boiled potatoes.”

    Ingredients

  • 1/2 cupolive oil
  • 3mediumonions, chopped
  • 6clovesgarlic, minced
  • 4mediumjalapenos
  • 1/2 teaspooncinnamon
  • 1tablespooncumin
  • 1teaspoonbasil
  • 2cupspeanuts, roasted and chopped
  • 1/2 cupparmesan cheese, grated
  • 3lbschicken breasts, chopped
  • 3/4 cuplow-fat yogurt, room temp
  • salt
  • pepper
  • Directions

  • Heat oil in large pan and sauté onions and garlic until transparent.
  • Add jalapenos, cinnamon, cumin, basil, peanuts, cheese and chicken; stir well.
  • Simmer for 30 minutes or until chicken is done.
  • Just before serving add yogurt and stir.
