    “Try topping the waffles with vanilla flavored nonfat yohurt or spiced apples.”

    Ingredients

  • 1largeegg, beaten
  • 2egg whites, beaten
  • 4tablespoonsbrown sugar
  • 1cupevaporated skim milk
  • 2tablespoonsvegetable oil
  • 1/2 cuppumpkin puree, canned
  • 2teaspoonsvanilla
  • 1cupall-purpose flour
  • 2teaspoonsbaking powder
  • 1/4 teaspoonsalt
  • 1 1/2 teaspoonscinnamon
  • 1/2 teaspoonnutmeg
  • 1/4 teaspoonginger
  • 1/4 teaspoonclove
  • 1/2 cupapple, finely diced
  • 1/4 cuptoasted walnuts
  • Directions

  • Beat together egg, egg whites, sugar, milk, oil, pumpkin and vanilla.
  • Mix dry ingredients.
  • Add to egg mixture.
  • DO NOT OVERMIX.
  • Fold in apple and nuts.
  • Make waffle in your waffle maker with about 3/4 cup of batter per waffle.
