    “Fast easy salad for summer evenings.”

    Ingredients

  • 1 (15ounce) cans black beans, rinsed,drained
  • 1 1/2 cupschopped tomatoes
  • 1 1/2 cupscooked rice
  • 1 (3 1/2 ounce) packages crumbled reduced fat feta cheese
  • 1/2 cupcelery, chopped
  • 1/2 cupgreen onion, chopped
  • 1/2 cupItalian dressing
  • 2tablespoons fresh cilantro or 2tablespoonsparsley, chopped
  • Directions

  • Mix all ingredients.
  • Refrigerate.
  • Serve.

In the mean time, I chopped aand combined the tomatoes, celery, green onions and parsley in a bowl. As soon as the rice was cooked, I added it to the bowl with the Italian dressing, then marinated the salad overnight to let the flavors have time to blend.
