    “Everyone I know loves these cookies. I took a batch to a party once and disappeared within 30 min. with people asking for more. I especially like the cinnamon and sugar. I must admit, it is not my creation; I got it from the Pillsbury Complete Book of Baking.”

    Ingredients

  • 1 1/2 cupssugar
  • 1/2 cup margarine or 1/2 cupbutter, softened
  • 1teaspoonvanilla
  • 2eggs
  • 2 3/4 cupsall-purpose flour
  • 1teaspooncream of tartar
  • 1/2 teaspoonbaking soda
  • 1/4 teaspoonsalt
  • 2tablespoonssugar
  • 2teaspoonscinnamon
  • Directions

  • Heat the oven to 400°F.
  • Next, in a large bowl, beat 1 1/2 cups sugar and margarine until light and fluffy.
  • Add vanilla and eggs and blend well.
  • Add flour, cream of tartar, baking soda, and salt, and mix well.
  • Mix 2 Tbsp sugar and 2 tsp cinnamon in small bowl.
  • Shape the dough into balls (approx 1-inch or whatever your preference) and roll in the cinnamon-sugar mixture.
  • Place 2 inches apart on ungreased cookie sheet.
  • Bake at 400°F for 7 to 9 minutes or until set.
  • Immediately remove from cookie sheets and cool completely.

  • “Delicious!Truly, wonderfully delicious.I HATE greasy cookies, and as this recipe had half the amount of butter of all the other ones I looked at, I knew it was going to be a winner.Sure enough, the cookies came out tender and chewy with plenty of buttery flavor, but not at all greasy.I also put a teaspoon of cinnamon into the batter to help it stand on its own, but the cinnamon sugar crust is just the icing on a very nice cake.Thanks a lot, Jo.”

  • “Easy, quick, and delicious! I added about 1/2 a teaspoon of cinnamon to the dough for a touch of spice. The dough was so easy to work with and I only needed 2 1/2 cups of flour. I also baked them for 7 min. Baking can be a bit of challenge at this altitude, but these turned out great. Thank you Jo!”
