  • “This is delicious.I used a red pepper instead of the green. It gave the rice a nice color. And for presentation, I put this in a glass 13×9 baking pan and topped with cheddar cheese and sliced black olive.Everyone ate it up.We will certainly make this again.Thank you!”

  • “Excellent recipe!”

  • “A great hit, Denise.I prepared it last night to go with beef enchiladas.’Twas a nice combination along with a big tossed green salad.Everyone cleaned their plate. Thanks for sharing; I’ll definitely make it again.”

  • “We served this as part of our Cinco de Mayo festivities… it was terrific. We used the hot Rotel and more crumbled bacon than the recipe called for.Everybody loved it!Thanks for posting the recipe.”

  • “Very flavorful.A little “chunky” for my taste.Next time I think I will puree the veggies a bit.But I will definitely try this one again.”

  • “This was very hot!And I generally like spicy food… I had to tone it down a bit.But the flavor was very good.”

  • “I made this for a luncheon at work today. It was a big hit.Not a bite was left and everyone I asked said that it was excellent.”

  • “OK–better then boxed.I felts it needed more tomato in ratio to the rice, and more seasoning. Will make again with a little tweaking.Thanks.”

  • “Brought this to a friends house for dinner and everybody loved it.
How can you go wrong with bacon?
Quick and easy to make too.”

  • “I fixed this to go with some chicken enchiladas I made for dinner. My DH loved this and said lets have this again! The only thing I did different was I used 1 can of green diced chilies and added some minced jalapenos. The flavors were delicious and it was very easy to put together.I will definately make this again.UPDATE:Made this again today (8/08/11) and used turkey bacon (cutting the amount in half) and it might not have been quite soooo delicious but still with the butter it made for a wonderful dish!”

  • “This was very good, I did add some corn and black beans…and sprnkled some cheese on top.”

  • “Oh my!This delicious rice dish was yummy and hearty enough to be the main dish, I’ve got to tell you.I made it pretty much as listed, but omitted the green pepper because I didn’t have one (and I’m not a fan, anyway).I also added only one can of Ortega chilis and this turned out to be just right for us…subtlebut not too strong with green chili flavor.I paired this dish with Recipe Zaar’s Oven Fried Chicken Chimichangas…a perfect combination that DH is still raving about. Can’t wait for tomorrow’s leftovers.Fantastic!”

  • “This is an amazing rice dish.I made this to go along with our enchiladas and we LOVED it.The bacon makes this dish.Thank you so much for sharing this with us, DD coulnd’t stop eating this.”

  • “My mom used to make a very similar Spanish Rice.I made a double batch of this (minus the green chiles, because somehow I was out) tonight and my family loved it!”

  • “Excellent recipe.Great taste.”

  • “Made this for dinner tonight and my guest went crazy for it.It is good, not really authentic, but still very very good.”

  • “I made this recipe for a party that I had a few years ago, and just found your recipe again. Nothing was left over! People were going back for more. One guy went back 3 times! Thanks for the recipe.”

  • “Spanish Rice is a pilaf. The essential step is to brown the rice in oil before adding water.”

  • “Wonderful ..Wonderful Recipe.!!With everthing listed I had on hand. No need to change anything here. My sound crazy but we had this with Fried Chicken and Steamed Cabbage. We had a large time eating and loving every bite. Thank You!!”

  • “This is relatively simple to make.I used the recipe as written except I used red bell pepper instead of green and omitted the green chilies. In order for the rice to get fully cooked, I would suggest being certain to bring the liquid to a good boil first and not just a simmer. If it doesn’t boil first it will need to simmer longer than 20 minutes once the rice is added. It was delicious.”
