Stuffed Cabbage Rolls

  • Ingredients

  • 1largehead of cabbage, cored
  • 1tablespoonbutter
  • 2mediumonions, chopped
  • 3/4 lblean beef, ground
  • 1/4 lbpork sausage, ground
  • 1cup white rice or 1cupbrown rice, cooked
  • 1/2 teaspoonallspice
  • 1 (28ounce) cans tomatoes
  • 1 (8ounce) cans tomato sauce
  • 1 (6ounce) cans tomato paste
  • 1teaspoonsalt
  • 1/2 teaspoongarlic salt
  • 1teaspoonthyme
  • to tastesour cream
  • Directions

  • Preheat oven to 350.
  • In a large pot, steam the cabbage for 10 minutes or untilthe leaves are softened enough to peel away.
  • Cool and separate leaves, gentlyshake off moisture, and set aside. Melt butter in a skillet and saute onionsuntil they are golden.
  • Remove half the onions to a bowl containing the groundbeef and pork sausage. Mix in the rice and allspice gently with your hands.
  • Tothe remaining onions in the skillet, add the tomatoes and juice, tomato sauce,tomato paste,salt and seasonings.
  • Simmer for 15 minutes.
  • Place a small amountofmeat mixture on each cabbage leaf.
  • Fold leaf over to enclose meat and starting at the stem end, roll up.
  • Place rolls, seam side down in a buttered baking dish.
  • Cover with tomato mixture and bake, uncovered for 1 hour.
  • Serve with sour cream.

  • “This is a terrific easy dish to put together. I needed something quick to put together and had and wanted to use cabbage so this fit the bill perfectly. I added some garlic powder to the sausage/ground beef mixture and decreased the allspice to 1/4 tsp. Instead of butter, I used 1/2 tsp. of olive oil to soften the onions. To this vegetable mixture, I added kalamata olives, (pitted) green pepper, and a fresh garlic clove minced finely. In went the tomatoes, (I used fresh tomatoes chunked up from the garden) and finally the sauce and paste. Roasted quietly in the oven and what a delight to partake. I can see where this would be great for OMAC. Thank you!”

  • “Very good! I would cook the cabbage a little bit longer so the leaves are more tender when your eating them. It made 10 cabbage rolls for me and It lasted through many meals. I served them with a baked potato which went well because of the sour cream. Th sour cream really makes this dish!”
