Texas Cowpoke Trail Mix

  • Ingredients

  • 2cupscereal( toasted oat or bran squares or circles, granola)
  • 2cupschopped mixed dried fruit( , apricots, apples, cherries, peaches, prunes, dates or figs)
  • 1 1/2 cupsdry roasted peanuts
  • 1cupthin pretzel stick, broken in half
  • 2/3 cupshredded coconut(optional)
  • 2tablespoonshoney
  • 1/2 teaspoonground cinnamon
  • Directions

  • In large bowl, stir together cereal, dried fruit, peanuts, pretzels and coconut, if desired.
  • Add honey and cinnamon, tossing well to coat.
  • Spread mixture on foil-lined cookie sheets.
  • Bake in preheated 350°F oven 10 minutes.
  • Cool; store in tightly covered container.

    I used a no-sugar added apple and cinnamon whole spelt cereal and some puffed rye squares and for the fruit cranberries, prunes and currants. Mmmm! The optional coconut is a must for me.

  • “Part of what was so wonderful was that I had all the ingredients without any problem.I used organic honey nut o’s cereal and dribs and drabs of dried fruit.(I always end up with 3 apricots, 2 prunes, etc.)I omitted the coconut (my kids will not really eat it).The taste is lightly sweet and cinnamony.A good healthy treat.”

Extremely simple to make, and I cut down on the cost by buying the ingredients at a bulk food store. I used a variety of dried fruit, including apricots, pears, plums, prunes, apple slices and peaches. The smell while it was baking was heavenly, and I just tried some and it tastes divine, with just a light hint of sweetness and cinnamon. I only used one large cookie sheet; don’t know if I should have used two, but the one large one worked fine. A little bit stuck to the foil, but not much. A true 5 star recipe; thanks for posting it!”
