Thai Cucumber Salad With Roasted Peanuts

  • Ingredients

  • 1/4 cupfresh lime juice
  • 1 1/2 tablespoonsfish sauce( can be found in Asian markets)
  • 1 1/2 tablespoonssugar
  • 1 1/2 tablespoonsminced seeded jalapeno chiles
  • 2garlic cloves, minced
  • 1 1/2 English cucumbers, halved, seeded, thinly sliced
  • 3/4 cupsliced red onion
  • 3tablespoonschopped fresh mint
  • 3tablespoonscoarsely chopped lightly dry roasted salted peanuts
  • Directions

  • Whisk first 5 ingredients in medium bowl.
  • Place cucumbers, onion and mint in large bowl.
  • Add dressing and toss to coat.
  • Season with salt and pepper to taste.
  • Sprinkle with peanuts and serve.
