Ingredients
1/4 cupfresh lime juice
1 1/2 tablespoonsfish sauce( can be found in Asian markets)
1 1/2 tablespoonssugar
1 1/2 tablespoonsminced seeded jalapeno chiles
2garlic cloves, minced
1 1/2 English cucumbers, halved, seeded, thinly sliced
3/4 cupsliced red onion
3tablespoonschopped fresh mint
3tablespoonscoarsely chopped lightly dry roasted salted peanuts
Directions
Whisk first 5 ingredients in medium bowl.
Place cucumbers, onion and mint in large bowl.
Add dressing and toss to coat.
Season with salt and pepper to taste.
Sprinkle with peanuts and serve.
