Tomato Bruschetta, Low Cal

  • Ingredients

  • 8slicesItalian bread
  • 2garlic cloves, halved
  • 1teaspoonolive oil
  • 2tablespoonsonions, minced
  • 1tomato, diced
  • 1pinchdried oregano
  • 1pinchground pepper
  • 2teaspoonsparmesan cheese(optional)
  • Directions

  • Toast bread.
  • Rub one side of hot toast with cut side of garlic.
  • Heat oil in nonstick skillet over medium-high heat; add onion and cook, stirring until tender.
  • Add tomato, oregano and pepper, stir.
  • Spoon tomato mixture over garlic side of hot toast and serve immediately.
  • Alternatively, sprinkle with Parmesan and broil for 1 minute.

I cut the recipe in half for 2 of us, used French bread cut diagonally, added two garlic cloves, smashed, to the onions and I know it’s supposed to be low cal, but I couldn’t resist, I drizzled olive oil over the toasted bread, heaped the mix on and sprinkled with asiago cheese and under the broiler it went. It will be done again and again!!! Thanks Recipezaar!!!”
