White Bean Pate with Tomato Relish

  • baguette, sliced and toasted
  • Tomato Relish

  • 1largetomato, chopped
  • 1 -2tablespoonparsley, chopped
  • 1tablespoonbalsamic vinegar
  • 1tablespoondrained capers
  • 1/2 teaspoonsugar
  • White Bean Pate

  • 1 (15ounce) cans cannellini( white kidney beans)
  • 1 1/2 teaspoonsoriental sesame oil
  • 3/4 teaspoonthyme, chopped
  • 1/4 teaspoongrated lemon, rind of
  • 4teaspoonslemon juice
  • 1clovegarlic, peeled
  • 1/4 teaspoonsalt
  • Directions

  • Stir ingredients for tomato relish together.
  • Season with pepper, stir occasionally.
  • In blender, combine beans, oil, thyme, lemon peel, lemon juice, garlic and salt.
  • Whirl til smooth.
  • Spoon bean pate into serving crock, or serve pate on toasts with relish.
