Almost Too-Easy Potato-Chicken-Cheese Soup

    “This soup is so good, they will think it took much longer. Sprinkle a little cheddar on top to make it even better.”

    Ingredients

  • 1 (5 1/4 ounce) packages betty crocker au gratin potatoes
  • 2cupsmilk
  • 1cupcut-up cooked chicken( I use canned)
  • 2tablespoonsminced onions
  • 3 (14ounce) cans chicken broth
  • 1 (10ounce) packages frozen mixed vegetables
  • Directions

  • Mix everything (including sauce mix from pkg) in 4 qt pan.
  • Bring to a boil, stirring.
  • Reduce heat and simmer for 15 minutes or until vegetables are tender.

  • “Made this tonight for dinner and it was very good, family all liked it.I did not use any onion as family doesn’t care for it, also used a box of 4 cheese scalloped potatoes which was all I had.Used a bag of frozen vegetables for soup and added some ex-wide broad noodles and let them cook right in the soup plus 1 cup of half & half in addition to the milk as it was getting a little too thick after adding the noodles.Easy, quick and delicious.It’s a keeper.”

Used all your ingredients except canned chicken-used fresh, didn’t add frozen mixed veggies and used a package of cheese and bacon scalloped potatoes. Now to jazz it up. Doubled the soup. Added 1/2 large onion, finely chopped, leaves of celery finely chopped, finely chopped leftover carrots, and thickened it with flour and extra milk, plus added a little extra bouillon powder. Excellent thick, hearty soup.Will be making again maybe with a few more changes, may try the instant mashed potatoes.”

Don’t care for canned chicken, I used Tysons grilled and ready Chicken chunks ( which are awesome to keep a bagin the freezer) and added a can of corn & pepper. YUMMY!!”

I sauted the onions in a little bit of margarine,I didn’t have any canned chicken broth,so I used three chicken boullion cubes and 4 1/2 cups water.Used 1 1/2 cups of chicken that I had in the freezer,and useddifferent bits of leftover frozen veggies.And after I added the rest of the ingredients,I let the soup simmer for about 25 minutes.I did a “quality control test” :)And I did have to add some salt and pepper to taste. If your wanting home made taste but don’t have the time, by all means this is the recipe you are looking for.This will be made again, thank you for posting.”

  • “Oh, this was divine! I did make a few small changes. I sauteed some stir-fry chicken in butter and garlic, and then upped the recipe to two packages of au gratin potatoes (generic brand). I messed around with the vegetables, too, using 8 or so ounces of general frozen vegetables and 12 ounces of frozen vegetables in cheese sauce. And when everything came up too thick and salty, I added more milk. Awesome recipe! I will make it a lot.”
