Baked Salmon (with Lime, Jalapeno Chive and Sour Cream Sauce)

  • Ingredients

  • 3/4-1lbsalmon fillet
  • 1tablespoonfresh lime juice
  • 1 1/2 teaspoonsbutter, melted
  • salt and pepper
  • 1 1/2 teaspoonsbutter
  • 2jalapeno chiles, seeded and julienned
  • 1/3 cupsour cream
  • 3/4 teaspoonfresh lime juice
  • to tastesalt
  • to tastewhite pepper
  • to tastefresh chives, snipped
  • to tastelime wedge
  • Directions

  • Preheat oven to 500 degrees.
  • Butter baking dish. Place salmon in dish skinside down.
  • Mix lime juice and butter. Brush over salmon.
  • Sprinkle with salt and pepper. Let stand 15 minutes.
  • Bake until fish is almost opaque,about 9 minutes per inch of thickness.
  • Meanwhile prepare sauce:
  • Meltbutter in heavy small saucepan over medium-low heat. Add chilies and cookuntil tender, stirring occasionally, about 3 minutes.
  • Add sour cream andstir until heated through; do not boil.
  • Mix in lime juice. Add salt andpepper.
  • Transfer fish to platter. Spoon sauce over.
  • Sprinkle generously with chives.
  • Garnish with lime wedges.
