    “This is an unbelievably flavourful rice recipe that almost seems a little too yummy for so few calories! I found this recice on a newsgroup, trimmed and vegetarian-ised it, and thought I’d share it with everyone here! It can easily be veganised with a suitable butter substitute.”

    Ingredients

  • 1cup long-grain rice or 1cupbasmati rice
  • 2cupswater
  • 1/4 cuproasted peanuts
  • 1tablespoonbutter
  • 1onion, sliced thinly
  • 1teaspoongingerroot, minced
  • 3/4 cupgrated carrot
  • salt
  • pepper
  • cilantro, to garnish(optional)
  • Directions

  • Combine rice and water in a medium saucepan.
  • Bring to a boil over high heat.
  • Reduce heat to low, cover with lid, and allow to steam until tender/cooked (about 20 minutes).
  • While rice is cooking, pulverize peanuts in a blender and set aside.
  • Melt butter in a large skillet over medium-high heat.
  • Saute onions until golden brown.
  • Stir in ginger, carrots, and salt to taste.
  • Reduce heat to low and cover to steam 5 minutes.
  • Stir in pepper and peanuts.
  • When rice is done, add it to the skillet and stir gently to combine with other ingredients.
  • Garnish with chopped cilantro and serve hot.

Absolutely incredible blending of flavors.I must say that all by itself I probably would have given this rice a 4* rating — mostly because as another reviewer said, the peanuts do impart a very strong flavor to the rice.Next time, I would add fewer peanuts to this dish to mellow the taste a little.I also stirred in some butter to the end result, and that helped to smooth it out.It was delicious!   • “Thanks Anu for a nice simple and colourful side dish, it was very much enjoyed. We cook our rice by boiling it for 5 minutes, then putting it into a steamer for a further 7 or 8 minutes. We did this, and added the browned onion, carrots and ginger about 2 minutes into the steaming stage. It worked very well.”
