  • “Wonderful and so easy ! This came out well. Also because its potassium enriched and low in cals. Thank you Tebo for sharing this and also for taking time to send me your comments. Since you liked “Potato and Egg Salad for the Lazy”, try this “Chickpeas, Tomato and Walnut Salad”. I really like the recipes which are easy to make, nutritious and taste great !!You stay in a beautiful country and I am going to be there next year.SmilesMini”

  • “This was a delicious carrot salad! I made it as directed, except that I left out the parsley because I didn’t have any on hand. It was so easy, especially when grating the carrots in a food processor. The flavors all mingled very well together, and it was a nice change from mayonnaise-based salads. I have a feeling I’ll be making this frequently!”

  • “Very easy and tasty. I made it a bit easier though by using a bag of match stick carrots instead of having to clean up the food processor. I didn’t add raisins but will try this with raisins next time. Thanks!”

  • “very tasty and easy to make.”

  • “Wonderful, fresh flavor.I shredded and dehydrated 20 lbs of carrots. When rehydrated they taste like fresh out of the garden.NOW I know how I will use them. Thanks for the recipe.”

  • “Healthy and easy. I’ll use a bit less sugar next time and look forward to trying cilanto and other add-ins next time. Thanks for posting.”

  • “Really tasty! The citris really makes a great punch of flavor with the carrot.I added golden raisins and walnuts to mine to make it sweet and crunchy.I also thought it need more dijon and salt, but that’s just my preference. This will be a hit at the baby shower I’m throwing tomorrow! Thanks so much!!”

  • “This was a good, basic recipe, but I had to jazz it up to suit our taste.I added a tablespoon of cider vinegar, a dollop of Marzetti slaw dressing, some garlic chives, sunflower seeds, sliced red grapes and a sprinkle of chopped pecans. It made a nice side dish.”

  • “Excellent! Excellent! Excellent! What a wonderful twist to a great salad with a much healthier aspect.Of course, I felt it needed a bit more sugar, so I added enough to meet my taste PLUS I added raisins. As a caterer, I will love to use this for my next event.”

  • “So easy and such a nice change from all the cloyingly sweet carrot salads.Unlike some of the other reviewers, I tried cutting the sugar back to 1/2 tsp. and then added the other half back in.The only change I made otherwise was to use olive oil instead of vegetable oil.Delicious!”

  • “Absolutely a great carrot salad.Even those who did not like carrots will love this.It has a ight/fresh taste that really enhances the flavor of the carrot. This is a winner, Tebo. Can’t wait to make it again.”

  • “I failed to read the directions – I dumped all the ingredients in the bowl rather than whisking the dressing ingredients first. The lemon was pronounced, but this could have been due to my lack of technique. I thought it was light and the carrot flavor was enhanced. The pepper is very visible but not overwhelming in taste. (My son didn’t like the dish.)”

  • “Very nice! Light and refreshing! I used 3 large carrots which made enough salad for about8 side dish servings, depending on the size of the serving, of course. I ran the recipe through Weight Watchers and it weighs in at 1 whole point per serving! Yeah! I think I will be making this salad often. Thanks for posting!”

  • “I could have eaten all of this salad in one sitting! It tastesfresh and juicy. I put in a half teaspoon of sugar and I threw in a handful of raisins. Thanks Tebo! This is a keeper.”

  • “Delicious. I used fresh organic mixed colored carrots fresh off the farm. Brought it over to a potluck and it was a big hit. I will definitely make this again.”

  • “I cut down the sugar as Grunig recommended. This salad is DELICIOUS. I don’t even like carrots, and I loved this salad.”

  • “This was pretty good, just tad on the sweet side for me.Next time I will cut the sugar by half and add some salad vinegar. All in all not bad.”

  • “Super easy to make, light tasting, and a nice side dish to grilled chicken.”

  • “I needed to make a light side dish for 15 people for a pot luck dinner. It was easy and is so flavorful. It went over very well!”
