    Ingredients

  • 1tablespoonoil
  • 4chicken breasts
  • 3green onions
  • 1/4 cupminced water chestnut
  • 1/4 cupsliced almonds
  • 4 -6lettuce leaves
  • Stir Fry Sauce

  • 1/4 cupwater
  • 1teaspooncornstarch
  • 1/3 cupsoy sauce
  • 1/4 cupsugar
  • 1/4 cupvinegar
  • 1tablespoonoil
  • 2teaspoonssesame seeds
  • 1teaspoonred pepper flakes
  • 1teaspoonchili oil
  • 1/2 teaspoonminced ginger
  • Sesame Ginger Dipping Sauce

  • 1/4 cupwater
  • 3/4 teaspooncornstarch
  • 1/3 cupsugar
  • 1/3 cupvinegar
  • 1/4 cupsoy sauce
  • 1teaspoonminced ginger
  • 1teaspoonoil
  • 1/2 teaspoonsesame seeds
  • 1/4 teaspoonminced garlic
  • 1dashred pepper flakes
  • 1dashparsley
  • Peanut Dipping Sauce

  • 1/2 cuppeanut butter
  • 1/3 cupwater
  • 2tablespoonsvinegar
  • 1/2 teaspoonminced ginger
  • 1/8 teaspooncrushed red pepper flakes
  • 1/4 cupsugar
  • 1/4 teaspoonminced garlic
  • 1/2 teaspoonchili oil
  • 1/2 teaspoonoil
  • 1tablespoonbrown sugar
  • Directions

  • Stirfry sauce: combine water and cornstarch and stir until cornstarch is dissolved.
  • Add this to the other stir fry sauce ingredients in a small saucepan over medium heat.
  • Bring to boil, then reduce heat and simmer till thick.
  • Sesame ginger dipping sauce: combine water and cornstarch in and mix until cornstarch is dissolved.
  • Combine this solution with the other dipping sauce ingredients in small pan over medium heat.
  • Bring to boil, then reduce heat and simmer for 2 minutes.
  • Peanut dipping sauce: combine ingredients in a pan over medium low heat.
  • Heat while whisking until sauce becomes smooth.
  • Remove from heat when done.
  • Heat 1 Tbsp of oil in a large skillet over medium heat.
  • Cook chicken breasts until done, turning every couple of minutes Remove to a cutting board and slice it into strips with a sharp knife.
  • Keep the pan hot.
  • Put chicken back in the same pan over medium/high heat, and add water chestnuts.
  • Heat for 1 minute.
  • Add 5 Tbsp of stir fry sauce to the chicken and heat for 2 minutes, stirring often.
  • The sauce should be bubbly.
  • Add the sliced green onions and stir.
  • The chicken is done.
  • Spoon on to lettuce”cups”.
  • Serve with the dipping sauces on the side.

The Stir Fry and Sesame Ginger Sauces had complex flavors, and just the right amount of spicy heat.I substituted Perdue ground chicken for the chicken breasts and was careful to not overcook it and dry it out.The texture of the ground chicken more closely resembled that of PF Chang’s Lettuce Wraps.Instead of iceburg lettuce, which breaks when it’s folded, I used romaine lettuce cups — “boats” — the perfect lettuce for good crunch. I couldn’t find chili oil, but substituted Chinese sweet chili sauce, and it was really delicious.I served this to three people, each getting their serving of meat in a Chinese soup cup, with a communal plate of lettuce leaves, and dipping sauce in individual soy sauce dishes.Even though I served it to three people, two people could easily finish this off in one sitting, it’s that good. Definitely a keeper.”

  • “my dh and i enjoyed this very much. i followed everything to the T except halfed the pepper flakes since my husband is very sensitive to heat. i also chopped my chicken in the food processor a little. i made both sauces and my dh and i liked the peanut sauce the best. i did only have 3 chicken breasts but they were large and i did throw all the stir fry sauce in it. the dipping sauces makes ALOT.so i’ll have to half it next time.”

  • “This recipe was pretty good. The chicken mixture felt like it was missing something… I can’t put my finger on it, though. I didn’t make the sesame ginger sauce but did make the peanut sauce… it was yummy, but easily overpowered the chicken to where all you could taste is peanut butter. I will try again with the sesame ginger sauce and maybe adding a little chili sauce to the stirfry sauce to increase heat and flavor. Overall, a good basic recipe that could use a little tweeking.”

  • “OMG, these were delicious! They tasted like they were from a restaurant. I agree with the others that it’s a little time-intensive (takes longer than 35 mins to make), but it’s SO worth it! I used ground pork instead of the chicken, and also added bean sprouts and enoki mushrooms to the stirfry. I used half white vinegar, half rice wine vinegar. I also used a bit of chili oil along with the regular oil to give it some spice.My husband has been raving about these ever since I made them. I’ve tried several lettuce wrap recipes in the past and these are BY FAR the best!”
