Coconut Creme Fudge

    “I came up with this last year to satisfy my husbands love for coconut! It is delicious! Enjoy!”

    Ingredients

  • 1 (12ounce) bags white chocolate chips
  • 1 (6ounce) bags flaked coconut
  • 1/2 cupbutter
  • 2cupssugar
  • 2/3 cupevaporated milk
  • 1teaspooncoconut flavoring
  • 1 (7ounce) jars marshmallow creme
  • Directions

  • In large pot over medium heat, cook and stir butter, sugar and milk.
  • Bring to boil and boil for 5 minutes or candy temperature of 230 degrees.
  • Remove from heat.
  • Add marshmallow creme and white chips stirring til well blended and chips are melted.
  • Add in coconut and coconut flavoring.
  • Mix well and pour into greased or sprayed medium baking dish.
  • Cool completely, then chill til firm.

  • “This fudge is so good it forced me to be naughty and eat some before breakfast. I found it hard to get out of the dish I chilled it in so next time I will put some baking paper down before I pour the mixture in. I used coconut flovoured evaporated milk because I had it in my pantry and the whole reason I made this recipe was to get rid of it, because of that i added less coconut flavouring but sprinkled extra coconut flakes on top. I also used recipe #75813 marshmallow creme by Kittencal because i had no idea where to find the jared stuff and it turned out delish!”

Having the coconut in there prevents it from having that trademark smooth & creamy fudge consistency, but the flavor makes up for it and it’s obvious it’s just the coconut flakes, not the fudge itself that you are noticing.
