Cold Macaroni Tuna Salad

    “This is the ANSWER for me on a hot summer day. I could eat the whole bowl. Usually serve on lettuce with a tall glass of lemonade.”

    Ingredients

  • 3hard-boiled eggs, diced
  • 3cupsmacaroni, uncooked
  • 1 (10ounce) packages frozen green peas, thawed and drained
  • 2 (6ounce) cans tuna, drained and flaked
  • 1/2-1cupmayonnaise( the amount depends on how moist or dry you like your salad)
  • 1/4 teaspoonsalt( “or” to taste)
  • 1/8 teaspoonpepper( “or” to taste)
  • Directions

  • Cook macaroni according to package directions, drain in colander and rinse with cold water.
  • In a large bowl, place the macaroni and peas.
  • Add the eggs and tuna; mix well.
  • Mix together mayo, salt, and pepper.
  • Add to tuna mixture a little at a time; mix well.
  • Cover and refrigerate for at least 1 hour or overnight.

I do not add the green peas because the little ones hate peas…..I add the celery & onion for some crunch as well as flavor…and the vinegar wakes up the flavor of the tuna. Tuna Mac Salad is my favorite and I did add some peas to the salad after I removed a portion for the kids. Very Good Addition to my favorite salad. Oh…I only used a single 6 oz. can of tuna and mayo to my desired consistency.”
