  • 2largesweet potatoes, peeled and diced
  • hot oil
  • 3tablespoonssugar
  • 3tablespoonscinnamon
  • Directions

  • Heat oil until it’s good and hot.
  • Fry sweet potatoes for about 8 minutes.
  • Remove from fryer and place on a napkin to drain off excess oil.
  • Sprinkle with sugar and cinnamon.
  • Stir to coat evenly.
  • Serve immediately.

I would think 2 T. of each would be plenty. And for anyone watching sugar intake just use the cinnmon/sugar mixture that comes in a jar and be sparing. But, we liked the sweet taste. They fried up very quickly, too.”
