    “A down home comfort food!”

    Ingredients

  • 1 1/2 lbslean ground beef
  • 1 -2onion, chopped
  • 1 (28ounce) cans diced tomatoes
  • 2cupswater
  • 1 (10ounce) cans tomato soup
  • 1dashparsley
  • 4carrots, chopped
  • 3stalkscelery, chopped
  • 8tablespoonspearl barley
  • 1/2 teaspoonthyme
  • 1bay leaf
  • 3 (10ounce) cansconsomme or 2beef bouillon cubes, mixed with 2 cups of water
  • salt and pepper
  • Directions

  • Brown meat and onions.
  • Drain well.
  • Combine all ingredients in a large pot.
  • Cook at least 2 hours or use a crockpot and cook up to 8 hours.
  • Remove bay leaf before serving.
  • This soup freezes well.
