  • Ingredients

  • 1/2 lbItalian sausage
  • 1largeonion, chopped
  • 1mediumgreen pepper, chopped
  • 1largecarrot, chopped
  • 2 (21ounce) cans chicken broth
  • 1 (14 1/2 ounce) cans diced tomatoes( with liquid)
  • 1cupwater
  • 1clovegarlic, minced
  • 1teaspoonsalt
  • 1/2 teaspoonpepper
  • 3/4 cupdry lentils, rinsed
  • Directions

  • Brown sausage; drain off fat.
  • In a soup pot add sausage and next nine ingredients; bring to a boil.
  • Add lentils cover and simmer until lentils are tender.

  • “This was an excellent soup!I made a few changes based on people’s comments:I omitted the water, as we like a thicker soup, I added 1/2 t. each curry powder, cumin, turmeric, and red pepper flakes.I garnished with fresh cilantro and it was so yummy!My husband added a bit of plain yogurt to cool it down since I also put in extra black pepper.He said the yogurt “added an extra dimension of flavor.”Mmmmm! It’s a keeper…”

  • “I have been looking for an easy Lentil soup that also tasted good. This recipe is it. I used ground beef instead of the sausage because that is what I had on hand. My son who is 13 hates it when I make soups because they usually are not filling enough for him but he really liked this one and got full. This soup is great!”

Although I should’ve realized just looking at the recipe that it was a thin broth-like soup, I guess I was thinking it would be a bit more substantive. It wasn’t to my taste, but my husband devoured it.”
